Emil Frey a young Swiss cheesemaker created Liederkranz cheese back in 1891. He based this name on a local singing group called Liederkranz Club. Emil Frey cheese is a cow’s milk cheese with an edible pale yellow orange tan crust. It has a mildly pungent flavor and could smell like ammonia if aged incorrectly.
Emil Frey Cheese (Liederkranz Cheese) is actually a recreation another kind of cheese which is called Limburger cheese. Althout Emil Frey’s version was subtly different because of the bacterial culture that was used.
